Oatmeal Cookie Energy Balls

A tasty snack packed with protein, healthy fats and fiber that your whole family will love

Prep Time – 20 minutes + 2 hours to harden in refrigerator
Servings – makes about 20 1” balls

Ingredients

  • 1 cup GF rolled oats

  • 1 cup walnuts

  • 1 cup Medjool dates (about 8 large), pitted and chopped

  • 1/4 cup unsweetened shredded coconut

  • 1/4 cup hemp seeds

  • 1/4 cup cashew butter

  • 2 tbsp melted coconut oil

  • 1/4 cup dairy free mini dark chocolate chips or cocao nibs


Directions

1.     Add walnuts and chopped dates to a food processor fitted with an S-shape blade. Process until a chunky crumb like texture is achieved.

2.     Add oats, hemp seeds and shredded coconut and process again until well combined.

3.     Add cashew butter and melted coconut oil and process on low until everything is well incorporated and sticky dough starts to form.

4.     Remove blade and fold in chocolate chips or cocao nibs.

5.     With wet hands, form dough into 1-inch balls and place on a parchment lined baking sheet.

6.     Refrigerate for at least 2 hours.

7.     Transfer energy balls to an airtight container and store in fridge for up to 2 weeks. Enjoy!
