Tahini Cashew Granola Bars

These no-bake granola bars are equal parts delicious and nutritious. The are packed with healthy fats, fiber and protein to fill you up and naturally sweetened with maple syrup to satisfy those sweet cravings. I always keep these stocked in my fridge for an easy and satisfying snack.

Prep Time – 15 minutes + 3 hours to harden in refrigerator
Servings – Makes 16 bars

Ingredients

  • 1/2 cup tahini

  • 1/2 cup cashew butter (or sub your favorite nut butter – just make sure it’s on the runny side)

  • 1/4 cup pure maple syrup

  • 1/4 cup melted coconut oil

  • 1 tsp vanilla extract

  • 2 cups GF rolled oats

  • 2 tbsp ground flax

  • 1/4 cup hemp seeds

  • 1/4 cup raw pumpkin seeds

  • 1/4 cup chopped dried unsweetened cherries

  • 1/4 cup shredded unsweetened coconut

  • 1/3 cup dark chocolate chips


DIRECTIONS

  1. In a large bowl combine tahini, cashew butter, maple syrup, melted coconut oil and vanilla. Stir well.

  2. Add in remaining ingredients and mix until everything is well incorporated.

  3. Pour mixture into an 8x8 parchment lined cake pan. Press down to form an even compacted layer.

  4. Place in refrigerator for at least 3 hours.

  5. Once your bars have hardened up, remove from fridge and slice into 16 squares.

  6. Store in an airtight container in the fridge for up to 2 weeks.
