Crunchy Peanut Butter Protein Balls

These irresistible crunchy balls make the perfect after-school snack that you can feel good about. Each ball packs in nearly 5 grams of protein plus heart healthy omega-3’s from hemp seeds and healthy fats from peanut butter so they won’t send you on a blood sugar roller coaster. If you want to make these nut-free, you can try swapping the peanut butter for a clean sunflower butter like this one.

Prep Time – 10 minutes (plus 2 hours to harden in fridge)
Servings – Makes about 14 1” balls

Ingredients

·     1/2 cup organic creamy peanut butter

·     1 tbsp raw honey (local if possible)

·     1 tsp vanilla extract

·     1 scoop unflavored BWBK protein powder

·     1/2 cup puffed organic quinoa

·     2 tbsp mini dairy-free chocolate chips


Directions

1.     Mix peanut butter, honey, vanilla and protein powder in a medium size bowl.

2. Fold in puffed quinoa, hemp seeds and chocolate chips.

3. Roll mixture into 1 inch balls. Place balls on a baking sheet or plate and refrigerate for 2 hours before serving. These are best served cold and will soften up and get a little sticky if left out for too long.

4. Store extras in an airtight container in the refrigerator for up to 2 weeks.
