Smoky Beef and Bean Chili

This hearty chili turns up the flavor thanks to the addition of smoky ancho chili powder. It is delicious served on it’s own or jazz it up with your favorite toppings.

Ingredients

·      2 tbsp avocado oil

·      1 yellow onion, diced

·     ·1 red pepper, diced

·      2 poblano peppers, diced

·      1 jalapeno, diced (optional for added heat)

·      2 cloves garlic, minced

·      2 15 oz cans organic black beans

·      1 15 oz can organic red kidney beans

·      1 lb grass fed ground beef

·      1 28 oz can organic crushed tomatoes

·      2 cups organic beef bone broth

·      3 tbsp ancho chili powder

·      1 tsp paprika

·      1 tsp garlic powder

·      ½ tsp cumin

·      1 ½ tsp sea salt

·      1-2 tbsp maple syrup


DIRECTIONS

1.     In a large pot or dutch oven, heat avocado oil over medium heat. Once warm, add diced onions and peppers. Sauté for 5-8 minutes until onions are translucent and peppers are soft.

2.     Add ground beef and garlic to pan. Break apart the meat with a wooden spoon and continue cooking until the meat is browned.

3.     Add the beans, crushed tomatoes, bone broth, spices and maple syrup. Stir well.

4.     Bring mixture to a slow boil then reduce heat to low and allow to simmer uncovered for 20-25 minutes, stirring occasionally.

5.     Once chili has thickened and cooked down a bit, taste and adjust seasonings as needed.

6.     Serve warm with desired toppings.
